The Summer Collection

Summer is here! It never fails. For some reason I only look forward to it for a short while, then once it's really here with the stifling heat and humidity, I wish I could be there. There in some cooler place where my "heat acceptance gene" won't go missing as it often does here. My favourite parts of the season are the beginning and the end when the heat is bearable and the beaches pristine and intact and mostly quiet.
On the other hand the days are longer and filled with beautiful sunsets. The heat and the water so close
by makes it difficult not to feel like you're on vacation every day of the week. What to do to keep refreshed? My mind goes to creamy puddings, clouds of meringue and pools of icecream..... don't forget the icecream!

Semifreddo all'Amaretto €12

A dreamy dessert. Creamy, velvety, speckled with crushed Amaretti biscuits on the inside and topped with a layer of the same. A very distinctive after dinner treat. Serves 8 to 10

Creme de Menthe Cheesecake €22

Refreshing, creamy, velvety. This cheesecake is lovely after a meal with it's minty freshness and exquisite taste. It has a lovely smooth texture all set on a biscuit base enhanced with chocolate. Serves 10 to 12

Chocolate Pavlova €18

A Pavlova is great in summer and in particular this dark beauty. A crisp and chewy meringue base, rich in cocoa and beaded with nuggets of dark chocolate. The layer of softly whipped cream topped with fresh fruit is a colourful contrast and marvelous combination. Serves 8

Tiramisu €22

Layers of sponge fingers soaked in coffee and liqueur are covered with layers of Mascarpone cream laced with more liqueur to compose this famous Italian dessert in all it's original form. Serves 12

Profiteroles €15

Delicious little choux buns filled with Mascarpone cream laced with dark rum. Accompanied with a light yet glorious chocolate sauce they're absolutely sensational. Serves 10 (4 per person)

The Mother's Day Collection

Spring! Makes you think of bright sunshine, trees in bloom, little colds. Now that Easter has been archived it's time to move on to the next upcoming celebration.....Mother's Day!! A special occasion, one that many of us look forward to. A time to spend with loved ones on a warm, sunny day in spring. To celebrate this occasion I have prepared some lovely, inviting desserts. The collection below also commends the arrival of strawberries, always a welcoming symbol of this season.

Pecan & Chocolate Pie Eur22

Chocolate chips and toasted pecans make up this delicious pie, laced with bourbon and encased in a sweet pastry. Deliciously sweet and chocolatey, the flavours blend marvelously to create a wonderful dessert. Serves 8 to 10

Cannoli con Crema Chantilly e Fragole €14

The idea for these cannoli came to me on a whim. I had empty cannoli shells which I wanted to use as dessert for my guests, I had fresh cream and I had strawberries. I mixed the last two together and filled the shells. The result was an innovative, fresh and well perceived dessert. Makes 14

Strawberry & Cinnamon Torte €15

A lovely cake. Ideal as a dessert or as a tea time treat. The subtle flavours of almonds and cinnamon hold in between them a layer of fresh strawberries which blends excellently during baking to create a moist, delicate, sweet cake. Serves 8 to 10

White Chocolate & Apricot Cheesecake €22

Delicately rich, creamy and smooth. This cheesecake is sinful! Apricots marry well into the velvety texture of the white chocolate cream rendering it luscious and enriching it. A marvelous dessert. Serves 8 to 10

The Christmas Collection

Christmas is right round the corner isn't it? Well it will be in the blink of an eye. Then it's time to be in full holiday swing. To have the tree up with presents wrapped under it and little decorations here and there around the house. My gifts are usually of the edible kind. My kitchen turns into some sort of Santa's Edible Workshop and the oven is on all the time. I love entertaining, holiday cooking and baking, having a bunch of friends over, planning and making the menus. That is the best part of Christmas for me. I love December so much I could wrap my arms around it and hug it so tight it would burst!!
Lemon Tart €15An elegant, tangy, sublime citrus tart. The fresh, crumbly pastry encases a thin layer of chocolate which is in harmony with the creamy lemon custard that covers it giving it a bittersweet flavour to delight the palate.Serves 8 to 10

Almond & Clementine Cake €15Little bits of apricots and clementine juice make this cake light and moist, while the almonds give it a compact texture. Ideal as a dessert or even as a tea time treat. Serves 8

Christmas Cake €25A profusion of dried fruit soaked in whisky, tea and marmalade makes this cake rich but not overpowering. It is then topped with a shower of fruit, nuts and seeds giving it a jewelled appearance. Serves 10 to 12

Mulled Wine Sorbet €12This a truly special sorbet! All the lovely, spicy, zesty aroma of mulled wine transformed from something warm into a beautiful cold contrast where the flavours are still exquisite and intense complimented by its luscious freshness and deep colour.

The Autumn/Winter Collection

Looking out of the window it's hard to believe that summer is over. There are signs that cannot be mistaken, night falls earlier, the light gives cold blue undertones and there are plenty of shadows and angles. However, I appreciate this time of year when darkness falls early and I cozy up with a good book, a slice of cake and a cup of tea. The most important thing though is that the oven is buzzing with cakes, tarts and the likes, creating an enticing aroma that wafts through every room!

Caramelized White Chocolate Cakes €16

Original, innovative, unusual. These little cakes taste extraordinarily different yet wonderful. The caramelized white chocolate has a very distinct, burnished flavour and turned into a cake is a great way to savour it. The cakes are baked individually thus rendering them more elegant when served, especially with a scoop of icecream to accompany them. Makes 8

Baileys Cheesecake €22

A soft, smooth, creamy, delicate cheesecake. Laced with Baileys to the right point where it is not overpowering but pleasantly enriching. A very delectable dessert where the flavours blend marvelously. Serves 8 to 10

Apple Cake €16

Chunks of fresh apples and hazelnuts make up this cinnamon-tinged sweet cake. It is moist, wholesome and delicious. Ideal as a teatime treat or served with some icecream. Serves 10

Savarin au Rum €25

A stunning dessert! The Savarin is similar to its more popular counterpart the Baba'. Here the centre is filled with luscious chocolate whipped cream to serve it with. The cake itself is soaked in rum syrup, whose flavour is piqued by orange zest and cinnamon sticks. Serves 10 to 12

Apple & Pear Crumble Tart €18

Apples & pears compose this very seasonal tart. Gently cooked spice-scented fruit encased in sweet pastry and topped with a hazelnut crumble. Delicious accompanied with custard or cream. Serves 8
